1929 Macduff Cake

Won first prize in The Mirror Recipe Contest (reference)

Ingredients:

  • ¾ lb. (330g) flour

  • 6 oz (170g) butter

  • 4 oz (110g) sugar

  • 1 tablespoonful golden syrup

  • 1 teaspoonful ground ginger

  • 4 oz (110g) preserved ginger

  • 2 eggs

  • ¾ cupful of milk

Method:

  1. Beat the eggs with the syrup

  2. Beat the butter and sugar to a cream then add eggs and syrup and mix well.

  3. Gradually beat in flour and ground ginger

  4. Stir in chopped preserved ginger and milk

  5. Turn into a well greased tin and bake in a moderate oven for about 1 ½ hours.
